Springfield Entrepreneur Eyes Restaurant Incubator Venture

Springfield owner seeks to create restaurant incubator for aspiring entrepreneurs.

R
ubicon Holdings LLC is exploring the possibility of creating a restaurant incubator at 232 Worthington St., a location that previously housed Dewey's Jazz Lounge. The space will offer shared kitchen facilities, business mentorship programs, and access to resources for aspiring entrepreneurs in the culinary industry.

The project aims to support emerging chefs, food truck operators, and individuals with unique food concepts by providing them with the tools they need to launch and grow their businesses. A survey is currently available to gauge interest in the incubator plan and gather feedback on what prospective operators may require in terms of resources.

According to Alfredo Orejuela, a manager at Rubicon, the incubator will cater to three types of entrepreneurs: novices with an idea for a restaurant, industry veterans looking to bring their concept to life, and seasoned entrepreneurs who need support to expand their business. The space will also include an event area for artists and a robust mentorship program run by experienced industry experts.

The incubator's goal is to help operators refine their concepts in a high-traffic downtown environment, reducing the costs associated with launching a new restaurant. Orejuela hopes that the incubator will become a catalyst for economic development, generating employment opportunities and injecting fresh vibrancy into Springfield's culinary scene.

A survey is available online until mid-August, and interested parties can provide feedback on what resources they need to succeed in the industry. After the survey closes, a working committee will form to develop programs for the incubator, with plans to open the newly renovated space by mid-August.
